Caprese
Insalata caprese calls up images of Rome in the summer, when the tomatoes and basil flourish.
To make at home:
Pull some fresh basil leaves off the plant in your kitchen garden.
(Fresh is mandatory, even if you have to buy it.)
Slice a ripe tomato.
(Prerably from your garden, but at least a real one.)
Slice a ball of fresh mozzarella cheese.
On a plate, layer the tomato and mozzarella.
Drizzle balsamic vinegar over them, and add a sprinkle of salt.
Top with a basil leaf.
Eat with a fork and knife, of pick up with your fingers.
Also makes a great
sandwich.
