Caprese

Insalata caprese calls up images of Rome in the summer, when the tomatoes and basil flourish.

To make at home:


  • Pull some fresh basil leaves off the plant in your kitchen garden.
    • (Fresh is mandatory, even if you have to buy it.)
  • Slice a ripe tomato.
    • (Preferably from your garden, but at least a real one.)
  • Slice a ball of fresh mozzarella cheese.
  • On a plate, layer the tomato and mozzarella.
  • Drizzle balsamic vinegar over them, and add a sprinkle of salt.
  • Top with a basil leaf.
  • Eat with a fork and knife, of pick up with your fingers.
Also makes a great sandwich.
