Easy Vegetarian Meals

Easy vegetarian meals come from every culinary tradition and culture in the world. In fact, there are so many that I have arranged them by category and just provided the index below. Each link provides some background, a few cooking tips, and lots of recipes. As vegetarian recipes, almost all are naturally low-fat and high fiber.
