Roasted Pumpkin Seeds

Roasted pumpkin seeds are an autumn treat, a true gem of seasonal eating. They also make a healthy snack, with lots of fiber and protein, plus anti-oxidants. If you are going to carve up a pumpkin for Halloween, why not use the seeds?

How to Roast

  1. Either cut the top out of the pumpkin, or split it in half
  2. Scoop the pulp and seeds out with a strong metal spoon.
  3. Remove the pulp with your hands, wiping your hands off as needed but NOT using water on the seeds.
  4. Lightly oil a baking sheet, while pre-heating the oven to 300 degrees F
  5. Spread the seeds into one shallow layer, and sprinkle with sea salt or a variety of other toppings.
  6. Bake 15-20 minutes, checking now and then, until golden brown.
  7. Let cool and enjoy.

Seasonings
Flavoring these crunchy morsels can be done with many of the same items you would use as a gourmet popcorn topping.
Sea salt is a favorite; but you can also experiment with lemon pepper, butter, garlic salt, ginger, cinammon, or even cayenne. For best results, sprinkle them one before baking.


Once you've roasted the pumpkin seeds, you are ready to bake an authentic pumpkin pie.
