Roasted Pumpkin Seeds
Roasted pumpkin seeds are an autumn treat, a true gem of seasonal eating. They also make a healthy snack, with lots of fiber and protein, plus anti-oxidants. If you are going to carve up a pumpkin for Halloween, why not use the seeds?
How to Roast
- Either cut the top out of the pumpkin, or split it in half
- Scoop the pulp and seeds out with a strong metal spoon.
- Remove the pulp with your hands, wiping your hands off as needed but NOT using water on the seeds.
- Lightly oil a baking sheet, while pre-heating the oven to 300 degrees F
- Spread the seeds into one shallow layer, and sprinkle with sea salt or a variety of other toppings.
- Bake 15-20 minutes, checking now and then, until golden brown.
- Let cool and enjoy.
Seasonings
Flavoring these crunchy morsels can be done with many of the same items you would use as a gourmet popcorn topping.
Sea salt is a favorite; but you can also experiment with lemon pepper, butter, garlic salt, ginger, cinammon, or even cayenne. For best results, sprinkle them one before baking.
